Sundays in the Kitchen

I spend most of my Sundays in the Kitchen baking and making a nice dinner. Today I wanted to make peanut butter cupcakes with peanut butter and jelly icing, and red beans and rice for dinner.

I almost panicked because i forgot to soak my beans overnight! So my grandmother told me to bring them to a boil and then turn off the heat and let them set awhile. It worked! I simmered the beans and other ingredients for 3 hours and I got the thumbs up approval from my hubby.
I also made the cupcakes, which are one of my favorites. This round I used organic strawberry preserves for the dollop of jelly on the top...Got Milk?
